Piononos de Plátano Maduro Rellenos de Carne

- 4 large Ripe plantains(peeled and boiled until tender)
- 500 g Ground beef
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 120 ml Tomato sauce
- 1 tsp Adobo seasoning
- 0.5 tsp Oregano
- 1 packet SazĂłn con achiote
- 2 tbsp Olive oil
- 2 large Eggs(beaten, for brushing)
- Salt(to taste)
- Black pepper(to taste)

Mash the boiled plantains until smooth. Season with a pinch of salt and pepper.

In a separate pan, heat olive oil over medium heat. Sauté onion until softened, then add garlic and cook for another minute until fragrant.

Add ground beef to the pan and cook, breaking it up with a spoon, until browned. Drain excess fat.

Stir in tomato sauce, adobo, oregano, and SazĂłn. Simmer for 10-15 minutes until the sauce has thickened.

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Spread a thin layer of mashed plantain onto a piece of parchment paper or plastic wrap. Spread a layer of the meat filling over the plantain, leaving a small border.

Carefully roll the plantain and filling together, like a jelly roll, using the parchment paper to help shape it. Seal the edges.

Place the rolled piononos seam-side down in the prepared baking dish. Repeat with remaining plantain and filling.
