🧂 Ingredients

  • 4 large Ripe plantains(peeled and boiled until tender)
  • 500 g Ground beef
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 120 ml Tomato sauce
  • 1 tsp Adobo seasoning
  • 0.5 tsp Oregano
  • 1 packet SazĂłn con achiote
  • 2 tbsp Olive oil
  • 2 large Eggs(beaten, for brushing)
  • Salt(to taste)
  • Black pepper(to taste)

👨‍🍳 Instructions

  1. 1

Mash the boiled plantains until smooth. Season with a pinch of salt and pepper.

  2. 2

In a separate pan, heat olive oil over medium heat. Sauté onion until softened, then add garlic and cook for another minute until fragrant.

  3. 3

Add ground beef to the pan and cook, breaking it up with a spoon, until browned. Drain excess fat.

  4. 4

Stir in tomato sauce, adobo, oregano, and SazĂłn. Simmer for 10-15 minutes until the sauce has thickened.

  5. 5

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  6. 6

Spread a thin layer of mashed plantain onto a piece of parchment paper or plastic wrap. Spread a layer of the meat filling over the plantain, leaving a small border.

  7. 7

Carefully roll the plantain and filling together, like a jelly roll, using the parchment paper to help shape it. Seal the edges.

  8. 8

Place the rolled piononos seam-side down in the prepared baking dish. Repeat with remaining plantain and filling.

  9. 9

Brush the tops of the piononos with beaten eggs for a golden finish.

  10. 10

Bake for 25-30 minutes, or until golden brown and heated through.

đź’ˇ Pro Tips

  • âś“Ensure plantains are very ripe for maximum sweetness and mashability.
  • âś“Don't overfill the piononos, or they will be difficult to roll.
  • âś“If the plantain mixture is too sticky, lightly oil your hands when spreading.

🔄 Variations

  • Add a pinch of cinnamon to the meat filling for extra warmth.
  • Incorporate finely chopped bell peppers or olives into the meat mixture.
  • Serve with a side of avocado slices or a simple green salad.
