Pite me Djathë (Kosovar Cheese Pie)
A savory and flaky pie made with layers of thin phyllo dough filled with a mixture of white cheese (often feta-like), eggs, and sometimes herbs. It's a versatile dish enjoyed for breakfast, lunch, or as a snack.

- 10 sheets Phyllo dough sheets(Thawed according to package instructions)
- 300 g White cheese(Crumbled (feta or similar))
- 3 large Eggs
- 0.5 cup Club soda(For fluffiness)
- 0.25 cup Olive oil
- 0.5 tsp Salt(Optional, adjust based on cheese saltiness)
- 1 tbsp Dill (optional)(Freshly chopped)

Preheat your oven to 180°C (350°F). Grease a 9-inch pie pan or a similar-sized baking dish.

In a large bowl, whisk together the crumbled white cheese, eggs, club soda, olive oil, salt (if using), and chopped dill (if using). Mix until well combined.

Lay two sheets of phyllo dough in the prepared pan, one crossed over the other, tucking the edges gently. Spoon about a quarter of the cheese mixture over the phyllo.
