Pite me Spinaq (Spinach Pie)
A savory and satisfying pie featuring a flaky pastry crust filled with a mixture of spinach, feta cheese, and sometimes onions and eggs. Pite me Spinaq is a versatile dish, enjoyed as a main course, appetizer, or snack.

- 4 cups All-purpose flour
- 1 cup Lukewarm water(plus more if needed)
- 1 for dough Large egg
- 1 tsp Salt(for dough)
- 2.5 sticks Butter(melted, for brushing)
- 3.5 cups Fresh spinach(baby spinach preferred, chopped)
- 3 cups Shredded mozzarella cheese
- 0.5 cup Feta cheese(crumbled)
- 1 for filling Large egg
- 0.5 cup Green onions(finely chopped (optional))

For the dough: In a large mixing bowl, combine flour, egg, lukewarm water, and salt. Mix until a well-combined dough forms. If it seems dry, add a tablespoon or two more water. Place on a floured surface and knead for about 5 minutes until soft. Cover and set aside.

For the filling: In a large bowl, combine chopped spinach, shredded mozzarella, crumbled feta, and the egg. If using, add the chopped green onions. Mix well with your hands, breaking up the spinach leaves.

Preheat oven to 400°F (200°C). Grease a round baking tray (approximately 17 inches).

Divide the dough into two equal portions. Roll out one portion thinly and place it in the prepared baking tray, brushing generously with melted butter. Repeat with half of the remaining dough sheets, brushing each with butter.

Spread the spinach filling evenly over the dough layers.

Layer the remaining dough sheets on top of the filling, brushing each with melted butter. Tuck in the edges to seal.

Brush the top layer with melted butter. Bake for 45 minutes.
