Prairie Wild Rice and Mushroom Stuffed Chicken
Tender chicken breasts stuffed with a hearty and flavorful mixture of wild rice, earthy mushrooms, and aromatic herbs, inspired by the bounty of the Canadian prairies.

- 4 6-oz each Boneless, skinless chicken breasts
- 1.5 cups Cooked wild rice
- 8 oz Mixed mushrooms(chopped (e.g., cremini, shiitake))
- 1 medium Shallot(finely chopped)
- 2 cloves Garlic(minced)
- 0.5 cup Chicken broth
- 1 tbsp Fresh thyme(chopped)
- 1 tsp Fresh sage(chopped)
- 2 tbsp Butter
- 1 tbsp Olive oil
- 0.75 tsp Salt
- 0.5 tsp Black pepper

Preheat oven to 375°F (190°C).

Prepare the chicken breasts: place each chicken breast between two pieces of plastic wrap and pound to about 1/2-inch thickness. Make a horizontal cut into the thickest side of each chicken breast to create a pocket for stuffing.

In a skillet, melt butter and olive oil over medium heat. Add shallots and sauté until softened, about 3-4 minutes.
