🧂 Ingredients

  • 500 g Smoked sausages(such as Creole sausage or good quality smoked pork sausage, sliced)
  • 2 large Onions(finely chopped)
  • 4 cloves Garlic cloves(minced)
  • 1 inch piece Ginger(grated)
  • 400 g Tomatoes(crushed or finely chopped)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Chili flakes(or to taste)
  • 1 cup Water
  • 2 tablespoons Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • 1 sprig Fresh thyme(optional)

👨‍🍳 Instructions

  1. 1

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.

  2. 2

Add the minced garlic and grated ginger, and cook for another minute until fragrant.

  3. 3

Stir in the turmeric powder and chili flakes, toasting them for about 30 seconds.

  4. 4

Add the sliced sausages to the pot and cook for a few minutes until lightly browned.

  5. 5

Stir in the crushed tomatoes and tomato paste. Add the water and fresh thyme sprig, if using. Bring the mixture to a simmer.

💡 Tip: Ensure all ingredients are well combined.
  6. 6

Reduce the heat to low, cover the pot, and let it simmer gently for at least 1 hour, or until the sauce has thickened and the flavors have melded. Stir occasionally.

💡 Tip: Add a little more water if the sauce becomes too thick.
  7. 7

Season with salt and black pepper to taste. Remove the thyme sprig before serving.

💡 Tip: Be cautious with salt, as smoked sausages can be quite salty.
  8. 8

Serve hot, typically with steamed white rice.

💡 Tip: A side of papaya chutney or a simple green salad complements this dish well.

💡 Pro Tips

  • The type of sausage used significantly impacts the flavor. Local Creole or salted sausages are traditional, but good quality smoked pork sausages work well.
  • Adjust the chili flakes to control the spice level.
  • For a richer sauce, you can add a splash of red wine during the simmering process.

🔄 Variations

  • Some recipes include a tablespoon of peanut butter for a smoother, richer sauce.
  • Add chopped bell peppers along with the onions for extra flavor and color.
