Shorbet Adas bil Khodar (Palestinian Red Lentil and Vegetable Soup)

- 1.5 cups Red lentils(rinsed)
- 2 tbsp Olive oil
- 1 medium Onion(finely chopped)
- 1 medium Carrot(finely chopped)
- 1 medium Celery stalk(finely chopped)
- 3 cloves Garlic cloves(minced)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 0.5 tsp Ground cinnamon
- 0.5 tsp Smoked paprika
- 1 medium Tomato(chopped, or 1/2 cup tomato puree)
- 6 cups Vegetable stock(or chicken stock)
- 0.5 whole Lemon(juiced)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes.
