Shurbo (Tajik Lamb and Vegetable Soup)

- 500 g Lamb shoulder(cut into 2-inch pieces)
- 3 tbsp Vegetable oil
- 2 medium Onions(chopped)
- 2 large Carrots(peeled and cut into chunks)
- 3 medium Potatoes(peeled and cut into chunks)
- 1 medium Turnips(peeled and cut into chunks)
- 2 medium Tomatoes(chopped)
- 2 liters Water or lamb broth

- 1/2 cup Fresh dill(chopped, for garnish)
- 1/2 cup Fresh cilantro(chopped, for garnish)
