Sierra Leone Pepper Soup
A light yet flavorful soup, Sierra Leonean Pepper Soup is known for its warming spices and ability to comfort. Traditionally made with meat or fish, it's often enjoyed on cooler days or when feeling unwell. This version uses a combination of fish and yams for a hearty yet brothy meal.

- 500 g Fish fillets (e.g., snapper, hake)(cut into chunks)
- 300 g Yam(peeled and cut into 1-inch cubes)
- 1 medium Plantain(peeled and cut into 1-inch chunks)
- 2 large Onions(roughly chopped)
- 1-2 Scotch bonnet pepper(or to taste, whole or finely chopped)
- 3 medium Fresh tomatoes(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Vegetable oil
- 8 cups Water
- to taste Salt
- 2 Seasoning cubes (e.g., Maggi)
- a small handful Mint leaves(optional, for garnish)

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sautรฉ until softened, about 5 minutes.

Add the minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the chopped tomatoes and scotch bonnet pepper(s). Cook for about 5 minutes until the tomatoes begin to break down.

Pour in the water and bring to a boil. Add the yam cubes and seasoning cubes. Reduce heat, cover, and simmer for about 15-20 minutes, or until the yam is tender.

Add the plantain chunks and fish pieces to the pot. Season with salt to taste. Simmer for another 10-15 minutes, or until the fish is cooked through and flakes easily, and the plantain is tender.

If using, stir in fresh mint leaves just before serving.
