Silavakakut (Finnish Bacon Potato Pancakes)
Hearty and flavorful potato pancakes made with mashed potatoes and studded with crispy bacon. These are a comforting and satisfying dish, often served as a main course.

- 2 large Eggs(lightly beaten)
- 1 cup All-purpose flour
- 2 tsp Sea salt
- 1 tsp Honey
- 12 oz Bacon, chopped
- 4 Tbsp Butter

Peel and quarter the potatoes. Boil in salted water until tender, about 10 minutes. Drain and mash thoroughly in a large bowl.

Meanwhile, cook the chopped bacon in a frying pan over medium heat until lightly browned. Remove from heat and reserve.

To the mashed potatoes, add the beaten eggs, flour, salt, and honey. Mix well to form a dough.

Wet your hands, take a portion of the dough, and roll it into a ball. Press your thumb into the center to create a hollow, fill with cooked bacon, and then cover with dough. Flatten the filled balls into pancake shapes.

Heat half the butter in a skillet over medium heat. Carefully place the pancakes in the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Add more butter as needed.
