- 1.5 large Large russet potatoes(about 2 cups mashed)
- 0.33 cup Milk(warmed to 105-110°F)
- 1 tbsp Powdered sugar
- 1 tbsp Active dry yeast
- 3.5 cups All-purpose flour(plus more for dusting)
- 1 tbsp Vegetable oil
- 1 unit Large egg
- 1 tsp Salt

Boil the potatoes until very tender (about 30 minutes). Drain, peel, and mash them until smooth. You should have about 2 cups of mashed potatoes.

In a small bowl, combine the warmed milk, powdered sugar, and yeast. Let it sit for about 10 minutes until foamy.

In a large bowl, combine the mashed potatoes, oil, egg, salt, and the yeast mixture. Gradually add about half of the flour and mix until combined. Add the remaining flour and mix until a soft dough forms that doesn't stick to your hands.
