  • 2 cups Cassava (yuca)(peeled and cut into chunks)
  • 2 medium Green plantains(peeled and sliced into rounds)
  • 2 medium Potatoes(peeled and diced)
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic cloves(minced)
  • 1 medium Bell pepper(diced)
  • 1 large Tomato(diced)
  • 1 cup Cilantro(chopped)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt(or to taste)
  • 0.5 teaspoon Black pepper(or to taste)
  • Lime wedges(for serving)
