  • 1 kg Beef tripe(cleaned and cut into small pieces)
  • 8 cups Beef broth
  • 3 medium Green plantains(peeled and cut into 1-inch pieces)
  • 2 medium Potatoes(peeled and diced)
  • 2 medium Carrots(peeled and diced)
  • 1 medium Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 medium Bell pepper(chopped)
  • 2 medium Tomatoes(diced)
  • 0.5 cup Cilantro(chopped)
  • 1 tsp Achiote powder (annatto)(for color)
  • 1.5 tsp Salt(or to taste)
  • 1 tsp Black pepper(or to taste)
  • 2 tbsp Vegetable oil

    Rinse the cleaned tripe thoroughly. In a large pot, cover the tripe with water and bring to a boil. Skim off any foam. Reduce heat and simmer for at least 1.5 to 2 hours, or until the tripe is tender.
