  • 500 g Chicken pieces(bone-in, such as thighs or drumsticks)
  • 2.5 L Water
  • 1 cup Quinoa(rinsed thoroughly)
  • 3 medium Medium potatoes(peeled and diced)
  • 2 medium Carrots(diced)
  • 2 stalks Celery stalks(chopped)
  • 1 medium Yellow onion(chopped)
  • 3 cloves Garlic cloves(minced)
  • 1/2 bunch Fresh cilantro(chopped)
  • 1/4 bunch Fresh parsley(chopped)
  • to taste Salt
  • to taste Black pepper
  • 2 tbsp Vegetable oil

    In a large pot, heat the vegetable oil over medium heat. Add the chopped yellow onion and minced garlic, sautéing until softened, about 5 minutes.
