Sopa de Quinua con Pollo

- 500 g Chicken pieces(bone-in, such as thighs or drumsticks)
- 2.5 L Water
- 1 cup Quinoa(rinsed thoroughly)
- 3 medium Medium potatoes(peeled and diced)
- 2 medium Carrots(diced)
- 2 stalks Celery stalks(chopped)
- 1 medium Yellow onion(chopped)
- 3 cloves Garlic cloves(minced)
- 1/2 bunch Fresh cilantro(chopped)
- 1/4 bunch Fresh parsley(chopped)

- to taste Black pepper
- 2 tbsp Vegetable oil

In a large pot, heat the vegetable oil over medium heat. Add the chopped yellow onion and minced garlic, sautéing until softened, about 5 minutes.

Add the chicken pieces to the pot and brown them on all sides. Season with salt and pepper.

Pour in the water and bring to a boil. Skim off any foam that rises to the surface. Reduce heat, cover, and simmer for 20 minutes, or until the chicken is cooked through.
