🧂 Ingredients

  • 400 g White fish fillets (e.g., tilapia, hake)(cut into chunks)
  • 2 large Sweet potatoes(peeled and cubed)
  • 1 large Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 inch Ginger(grated)
  • 1 can (400g) Diced tomatoes
  • 400 ml Coconut milk
  • 4 tbsp Peanut butter
  • 2 tbsp Vegetable oil
  • 1 tsp Turmeric powder
  • 0.5 tsp Cumin powder
  • 0.5 tsp Coriander powder
  • 0.25 tsp Red chili flakes(optional)
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh coriander

    Season the fish chunks with salt and pepper. Set aside.

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

    Stir in turmeric, cumin, coriander, and red chili flakes (if using). Cook for another minute until fragrant.

    Add the cubed sweet potatoes and stir to coat them with the spices. Cook for 3-5 minutes.

    Pour in the diced tomatoes, coconut milk, and peanut butter. Stir well to combine. Bring to a simmer.

    Reduce heat to low, cover, and simmer for 20-25 minutes, or until the sweet potatoes are tender. Stir occasionally.

    Gently add the seasoned fish chunks to the stew. Cover and cook for another 5-8 minutes, or until the fish is cooked through and flakes easily. Be careful not to over-stir, to prevent the fish from breaking apart.
