- 1.5 lb Chicken thighs(bone-in, skin-on, cut into serving pieces)
- 2 tbsp Vegetable oil
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 tbsp Ginger(freshly grated)
- 2 tbsp Curry powder
- 1 tsp Turmeric
- 0.5 tsp Cayenne pepper(or to taste)
- 1 can (14.5 oz) Tomatoes(diced)
- 2 medium Potatoes(peeled and cubed)
- 2 medium Carrots(peeled and sliced)
- 13.5 oz Coconut milk(full-fat)
- 1 cup Chicken broth
- 1 tsp Thyme(fresh leaves or 0.5 tsp dried)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 0.25 cup Fresh cilantro(chopped, for garnish)
