  • 3 tbsp Vegetable oil
  • 2 medium Onions(finely chopped)
  • 4 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 400 g Tomatoes(canned crushed or fresh pureed)
  • 2 tbsp Tomato paste
  • 150 g Peanut butter(smooth or crunchy)
  • 750 ml Vegetable broth
  • 2 medium Carrots(peeled and diced)
  • 2 medium Potatoes(peeled and diced)
  • 1 medium Zucchini(diced)
  • 200 g Okra(fresh or frozen, trimmed)
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 0.5 tsp Chili powder(or to taste)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)
  • 0.25 cup Fresh cilantro(chopped, for garnish)

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger to the pot and cook for another minute until fragrant.

    Stir in the crushed tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally, until the mixture darkens slightly.

    In a separate bowl, whisk together the peanut butter and vegetable broth until smooth. Pour this mixture into the pot with the tomatoes.

    Add the diced carrots, potatoes, zucchini, and okra to the pot. Stir in cumin, coriander, turmeric, chili powder, salt, and black pepper.

    Bring the stew to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
