🧂 Ingredients
- 3 tbsp Vegetable oil
- 2 medium Onions(finely chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(canned crushed or fresh pureed)
- 2 tbsp Tomato paste
- 150 g Peanut butter(smooth or crunchy)
- 750 ml Vegetable broth
- 2 medium Carrots(peeled and diced)
- 2 medium Potatoes(peeled and diced)
- 1 medium Zucchini(diced)
- 200 g Okra(fresh or frozen, trimmed)
- 1 tsp Cumin
- 1 tsp Coriander
- 0.5 tsp Turmeric
- 0.5 tsp Chili powder(or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 0.25 cup Fresh cilantro(chopped, for garnish)
👨🍳 Instructions
- 1
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until softened, about 5-7 minutes.
- 2
Add minced garlic and grated ginger to the pot and cook for another minute until fragrant.
- 3
Stir in the crushed tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally, until the mixture darkens slightly.
- 4
In a separate bowl, whisk together the peanut butter and vegetable broth until smooth. Pour this mixture into the pot with the tomatoes.
- 5
Add the diced carrots, potatoes, zucchini, and okra to the pot. Stir in cumin, coriander, turmeric, chili powder, salt, and black pepper.
- 6
Bring the stew to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
- 7
Taste and adjust seasoning if necessary. If the stew is too thick, add a little more broth or water.
- 8
Serve hot, garnished with fresh cilantro. Mullah Nabat is traditionally served with Kisra or rice.
💡 Pro Tips
- ✓Ensure the peanut butter is well-incorporated into the broth to avoid lumps.
- ✓Adjust the chili powder to your preferred level of heat.
- ✓You can add other vegetables like sweet potatoes, eggplant, or bell peppers.
🔄 Variations
- Add a piece of dried fish (like Kajaik) for an extra layer of flavor.
- For a richer stew, use beef or lamb broth instead of vegetable broth.
