Superkanja is a traditional Gambian okra stew, often made with beef, smoked fish (like catfish), onions, and palm oil. It's a hearty and flavorful dish with a unique texture from the okra, typically served with rice or fufu.

- 2 lbs Lean beef(cut into chunks)
- 1 lb Smoked catfish or other fish(cleaned)
- 2 cups Palm oil
- 2 lbs Okra(diced into small cubes)
- 0.25 tsp Baking powder
- 2 medium Onions(chopped)
- 8 cups Water
- 1 tsp Salt(or to taste)
- 1 tsp Pepper(to taste)
- 1 Seasoning cube(optional)

Wash the beef chunks thoroughly. In a large pot, boil the beef and fish in 8 cups of water for about 15 minutes. Remove the smoked fish from the pot and set aside.

Add the chopped onions, salt, pepper, and diced okra to the pot with the beef. Mix well.

Cook over medium heat for 15 minutes, then add the palm oil. Stir well.

Reduce heat to low and simmer for 20 minutes, stirring occasionally to prevent the okra from sticking to the bottom.

Add the baking powder and stir. Return the reserved smoked fish to the pot. Continue to simmer on low heat for another 10-15 minutes, allowing the flavors to meld.
