  • 20 sheets Spring roll wrappers
  • 200 g Cabbage(finely shredded)
  • 100 g Carrots(julienned)
  • 100 g Bean sprouts
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic(minced)
  • 2 tbsp Soy sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 3 tbsp Vegetable oil(for stir-frying)
  • 1 large Egg(beaten, for sealing)

    Heat 3 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Add onion and garlic and stir-fry until fragrant.

    Add shredded cabbage and julienned carrots. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

    Add bean sprouts, soy sauce, oyster sauce, and sesame oil. Stir-fry for another 1-2 minutes until combined.

    Remove from heat and let the filling cool completely. This is crucial to prevent soggy wrappers.

    To assemble the loempia, place a spring roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2-3 tablespoons of filling onto the lower third of the wrapper.

    Fold the bottom corner over the filling, then fold in the sides. Roll up tightly towards the top corner. Brush the top corner with beaten egg to seal.

    Repeat with the remaining wrappers and filling. Ensure all rolls are sealed tightly.

    Heat enough vegetable oil for deep-frying in a wok or deep pot to 170-180°C (340-350°F). Carefully fry the loempia in batches until golden brown and crispy, about 3-5 minutes per side.
