🧂 Ingredients
- 800 g Pork shoulder(cut into 1.5-inch cubes)
- 2 medium Onions(cut into wedges)
- 2 medium Bell peppers(mixed colors, seeded and cut into 1.5-inch pieces)
- 1 medium Zucchini(cut into 1-inch thick rounds)
- 4 tbsp Olive oil
- 2 tbsp Red wine vinegar
- 3 cloves Garlic(minced)
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1 tsp Paprika
- 0.5 tsp Black pepper(freshly ground)
- to taste Salt
- 8-10 Wooden or metal skewers
👨🍳 Instructions
- 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
💡 Tip: Soaking wooden skewers is crucial for safe grilling. - 2
In a large bowl, combine the pork cubes, olive oil, red wine vinegar, minced garlic, oregano, thyme, paprika, salt, and pepper. Toss well to coat the pork evenly.
💡 Tip: Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator. - 3
Thread the marinated pork cubes onto the skewers, alternating with pieces of onion, bell pepper, and zucchini.
💡 Tip: Don't pack the ingredients too tightly on the skewers to ensure even cooking. - 4
Preheat your grill to medium-high heat.
💡 Tip: Ensure the grill grates are clean and lightly oiled to prevent sticking. - 5
Grill the skewers for about 12-15 minutes, turning occasionally, until the pork is cooked through and nicely charred, and the vegetables are tender.
💡 Tip: The internal temperature of the pork should reach 71°C (160°F). - 6
Remove skewers from the grill and let them rest for a few minutes before serving.
💡 Tip: Resting allows the juices to redistribute, resulting in more tender meat.
💡 Pro Tips
- ✓Pork shoulder is ideal for its fat content, which keeps the meat moist during grilling.
- ✓Feel free to add other vegetables like cherry tomatoes or mushrooms to the skewers.
- ✓Serve with a side of fresh salad, yogurt dip, or traditional Bulgarian bread.
🔄 Variations
- Marinate the pork in a mix of yogurt and spices for an even more tender result.
- Add a pinch of chili flakes to the marinade for a spicy kick.
- Grill the skewers over charcoal for an authentic smoky flavor.
