Malawian Sweet Potato and Peanut Stew

- 2 medium Sweet potatoes(peeled and diced into 1-inch cubes)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 inch knob Ginger(fresh, grated or minced)
- 4 cups Vegetable broth
- 1 can (15 oz) Diced tomatoes(undrained)
- 1/2 cup Creamy peanut butter
- 4 cups Spinach(fresh, packed)
- 1 tsp Cumin
- 1/4 tsp Cayenne pepper(or to taste)

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
