Sychky (Ukrainian Fried Cheese Patties)
Sychky are small, savory fried patties made from farmer's cheese, often mixed with a binder like egg and flour, and sometimes herbs or spices. They are typically pan-fried until golden brown and crispy on the outside, with a soft, cheesy interior. This dish is a comforting and simple way to enjoy farmer's cheese, often served as a side dish or a light meal.

🧂 Ingredients
- 500 g Farmer's cheese (Tvorog)(drained if very wet)
- 1 large Egg
- 3-4 tbsp All-purpose flour(plus more for dusting)
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Fresh dill or parsley(finely chopped (optional))
- 2-3 tbsp Vegetable oil or butter(for frying)
👨🍳 Instructions
- 1
In a medium bowl, combine the farmer's cheese, egg, 3 tablespoons of flour, salt, pepper, and optional herbs. Mix well until a cohesive dough forms. If the mixture is too wet to form patties, add the remaining tablespoon of flour.
- 2
Lightly flour a clean surface or a plate. Shape the cheese mixture into small, flattened patties, about 2 inches in diameter and 1/2 inch thick.
- 3
Heat the oil or butter in a large skillet over medium heat.
- 4
Carefully place the patties in the hot skillet, ensuring not to overcrowch the pan. Fry for about 4-5 minutes per side, until golden brown and crispy.
- 5
Remove the sychky from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- 6
Serve hot, optionally with a dollop of sour cream or a side of yogurt.
