- 2 Bay leaves
- 3-4 Cardamom pods
- 4-5 Cloves
- 1 inch Cinnamon stick
- 1/2 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Garam masala

- 3.5 cups Water or vegetable broth
- 2 tbsp Fresh coriander(chopped, for garnish)
- 2 tbsp Cashews or raisins(optional, for garnish)

Rinse the basmati rice thoroughly and soak it in water for 20-30 minutes. Drain well.

Heat ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat. Add bay leaves, cardamom pods, cloves, and cinnamon stick. Sauté for 30 seconds until fragrant.

Add sliced onion and sauté until golden brown. Add ginger-garlic paste and green chilies, and cook for another minute until the raw smell disappears.

Add the mixed vegetables and sauté for 5-7 minutes until they are slightly tender.
