🧂 Ingredients

  • 1 kg Whole chicken(cut into serving pieces)
  • 2 large Onions(chopped)
  • 6 cloves Garlic(minced)
  • 1 tablespoon Ginger(grated)
  • 150 g Tomato paste
  • 400 g Diced tomatoes(canned)
  • 3 medium Carrots(peeled and cut into chunks)
  • 300 g Cassava(peeled and cut into chunks)
  • 0.5 small Cabbage(cut into wedges)
  • 1 medium Eggplant(cut into chunks)
  • 2 medium Sweet potato(peeled and cut into chunks)
  • 4 tablespoons Vegetable oil
  • 1 liter Water(or as needed)
  • 1 teaspoon Salt(or to taste)
  • 0.5 teaspoon Black pepper(or to taste)
  • 2 Bay leaves
  • 400 g Broken rice
  • 1 bunch Parsley(for garnish, chopped)

    Season the chicken pieces with salt and pepper.

    💡 Tip: Allow chicken to marinate for at least 15 minutes.

    In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.
