Töltött Paprika Rizs Nélkül (Stuffed Peppers Without Rice) - Hungary traditional dish

🧂 Ingredients

  • 6 large Bell peppers(any color, tops removed, seeds and membranes cleaned out)
  • 500 g Ground pork
  • 250 g Ground beef
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 2 tbsp Tomato paste
  • 2 tbsp Sweet Hungarian paprika
  • 1 tsp Smoked paprika
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper(freshly ground)
  • 1 large Eggs
  • 800 g Canned crushed tomatoes
  • 200 ml Vegetable broth
  • 2 tbsp Fresh parsley(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

    Preheat oven to 180°C (350°F).

  2. 2

In a large bowl, combine ground pork, ground beef, chopped onion, minced garlic, tomato paste, sweet paprika, smoked paprika, salt, pepper, and the egg. Mix well until thoroughly combined.

  3. 3

Carefully stuff the prepared bell peppers with the meat mixture. Do not overstuff, as the meat will expand slightly during cooking.

  4. 4

In a baking dish large enough to hold the peppers upright, pour the crushed tomatoes and vegetable broth. Stir to combine.

  5. 5

Place the stuffed peppers into the tomato sauce mixture in the baking dish. They should stand upright.

  6. 6

Cover the baking dish tightly with foil. Bake for 30 minutes.

  7. 7

Remove the foil and continue baking for another 15-20 minutes, or until the peppers are tender and the meat is cooked through.

  8. 8

Garnish with fresh chopped parsley before serving. The sauce can be spooned over the peppers.

💡 Pro Tips

  • If the peppers are not standing upright well, you can place them in a muffin tin within the baking dish for support.
  • For a richer sauce, you can add a bay leaf or a pinch of dried marjoram to the tomato mixture.
  • Ensure the peppers are tender but not mushy; adjust baking time as needed.

🔄 Variations

  • Add finely diced carrots or celery to the meat filling for extra vegetables.
  • For a spicier version, add a pinch of hot paprika or a finely chopped chili pepper to the filling.
  • Serve with a side of sour cream or a dollop of plain yogurt.
