Torrejitas de Maíz (Sweet Corn Fritters)
Torrejitas de Maíz are delightful sweet corn fritters, a popular snack or breakfast item in Paraguay. Made with fresh corn kernels, a touch of sweetness, and a binding batter, these fritters are pan-fried until golden and crispy on the outside, while remaining tender and moist on the inside. They offer a burst of sweet corn flavor in every bite.

🧂 Ingredients
- 2 cups Fresh corn kernels(from about 4 ears of corn)
- 1/2 cup All-purpose flour
- 2 tablespoons Brown sugar(or to taste)
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 large Egg(beaten)
- 2-3 tablespoons Milk(or as needed for consistency)
- for frying Vegetable oil
👨🍳 Instructions
- 1
Remove the corn kernels from the cobs. If using a food processor, pulse the corn kernels a few times until coarsely chopped. Do not over-process into a smooth puree; a slightly chunky texture is desired.
- 2
In a large bowl, combine the processed corn kernels, all-purpose flour, brown sugar, baking powder, and salt. Stir to combine.
- 3
Add the beaten egg and 2 tablespoons of milk to the dry ingredients. Stir until a thick batter forms. If the batter is too stiff, add another tablespoon of milk until it reaches a consistency that can be spooned but holds its shape.
💡 Tip: The batter should be thick enough to not spread too much when dropped into the oil. - 4
Heat about 1-2 inches of vegetable oil in a high-sided skillet or saucepan over medium-high heat until it reaches about 350-360°F (175-180°C).
- 5
Carefully drop rounded tablespoons of the batter into the hot oil, being careful not to overcrowd the pan. Fry in batches.
- 6
Fry the fritters for about 3-5 minutes per side, or until they are golden brown and cooked through. Flip them gently halfway through cooking.
💡 Tip: Adjust the heat as needed to maintain a consistent frying temperature. - 7
Using a slotted spoon, remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
💡 Pro Tips
- ✓For a savory variation, omit the brown sugar and add shredded cheese (like cheddar or queso fresco) and a pinch of Adobo seasoning to the batter.
- ✓Ensure the oil is hot enough before frying; otherwise, the fritters will absorb too much oil and become greasy.
- ✓These fritters are best enjoyed fresh.
🔄 Variations
- Add finely chopped chives or cilantro to the batter.
- Serve with a side of salsa or a drizzle of honey.
