🧂 Ingredients

  • 200 g Red lentils
  • 150 g Fine bulgur (kısır bulguru)(Also known as fine or #2 bulgur. Do not use coarse bulgur.)
  • 1 medium Yellow onion
  • 2 tbsp Olive oil(For sautéing the onion.)
  • 2 tbsp Tomato paste
  • 4 stalks Green onions (scallions)
  • 1/2 cup Fresh parsley
  • 1 tsp Ground cumin
  • 1/2 tsp Salt(Or to taste)
  • 1/4 tsp Black pepper(Freshly ground, or to taste)
  • 1/2 Lemon(For serving, cut into wedges)
  • 1 head Lettuce leaves(Such as romaine or butter lettuce, for serving)

👨‍🍳 Instructions

  1. 1

Cook the red lentils: Combine the rinsed red lentils with 500ml (about 2 cups) of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the lentils are very soft and have broken down into a mushy consistency. Drain any excess water if necessary.

Add bulgur and let it absorb: While the lentils are still hot, stir in the fine bulgur, tomato paste, and cumin. Mix well to combine. Cover the saucepan tightly and let it sit off the heat for 20 minutes, allowing the bulgur to absorb the moisture and soften.

Sauté the onion: While the bulgur is absorbing, heat the olive oil in a small skillet over medium heat (around 175°C / 350°F). Add the finely chopped onion and sauté for 5-7 minutes, stirring occasionally, until softened and translucent, but not browned. Remove from heat.

Combine and season the mixture: Add the sautéed onions, sliced green onions, chopped parsley, salt, and pepper to the lentil and bulgur mixture. Knead the mixture with your hands (or use a sturdy spoon) for about 5-10 minutes until it becomes a cohesive, dough-like consistency. The mixture should hold together when pressed.

Shape the köfte: Allow the mixture to cool slightly for about 10-15 minutes until it's warm enough to handle comfortably. Take small portions of the mixture (about 1-2 tablespoons each) and shape them into oval or elongated patties, similar to a small football or finger shape. You can also roll them into small balls.

Serve: Arrange the Mercimek Köftesi on a platter. Serve immediately or at room temperature, typically wrapped in crisp lettuce leaves and drizzled with fresh lemon juice.

💡 Pro Tips

  • Ensure the lentils are cooked until very soft to create a good base for the patties.
  • Do not skip the resting time after adding bulgur; it's crucial for texture.
  • Kneading the mixture well helps bind the ingredients together for easier shaping.
  • Shape the köfte while the mixture is still warm, but not hot, as it becomes easier to mold.
  • Mercimek Köftesi are excellent for meal prep and can be made a day in advance. Store covered in the refrigerator and bring to room temperature before serving.

🔄 Variations

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes (pul biber) along with the cumin.
  • Experiment with different fresh herbs like mint or dill for a variation in flavor.
  • Add a pinch of pomegranate molasses to the mixture for a tangy-sweet note.
