🧂 Ingredients

  • 750 g Beef(stewing beef, cut into 1-inch cubes)
  • 500 g Okra(trimmed and cut into 1-inch pieces)
  • 1 large Onions(chopped)
  • 2 medium Tomatoes(chopped)
  • 3 cloves Garlic(minced)
  • 1/2 inch piece Ginger(grated)
  • 2 tbsp Vegetable oil
  • 500 ml Water or beef broth
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Coriander leaves(chopped, for garnish)

    Season the beef cubes with salt and pepper.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches until well-seared on all sides. Remove the beef and set aside.

    Reduce heat to medium. Add chopped onions to the pot and cook until softened, about 5 minutes.

    Add minced garlic and grated ginger, and cook for 1 minute until fragrant.

    Add the chopped tomatoes and cook for about 5-7 minutes, stirring occasionally, until they start to break down.

    Return the browned beef to the pot. Pour in the water or beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes, or until the beef is tender.

    Add the cut okra to the stew. Stir well, cover, and continue to cook for another 15-20 minutes, or until the okra is tender and has released some of its thickening properties. Avoid over-stirring the okra to minimize sliminess.
