Kip Kerrie met Rijst
A popular Indonesian-influenced Dutch dish, Kip Kerrie is a mild chicken curry made with coconut milk, curry powder, and often includes ingredients like apple and raisins, served with rice.

- 500 g Chicken breast or thighs(cut into bite-sized pieces)
- 1 large Onion(chopped)
- 2 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 2 tbsp Curry powder
- 1/2 tsp Turmeric
- 400 ml Coconut milk
- 100 ml Chicken broth
- 1 medium Apple(peeled, cored, and diced)
- 50 g Raisins
- 2 tbsp Vegetable oil
- to taste Salt
- to taste Pepper
- as needed Cooked rice(for serving)

Heat the vegetable oil in a large pan or pot over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the curry powder and turmeric, and cook for 1 minute, stirring constantly, until fragrant.

Add the chicken pieces to the pan and cook until lightly browned on all sides.

Pour in the coconut milk and chicken broth. Add the diced apple and raisins. Bring to a simmer.

Reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Season with salt and pepper to taste.
