Ethiopian Cabbage and Carrot Stir-fry

Sauté Aromatics: Heat the canola oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. Stir in the minced garlic, grated ginger, and chopped jalapeño (if using), and cook for another 2 minutes until fragrant.

Add Root Vegetables: Add the cubed potatoes and sliced carrots to the pot. Stir to coat them evenly with the spice and tomato mixture. Pour in 1/2 cup of water, season with salt, and bring the stew to a boil.
