  • 4 cups Ghee or Sesame Oil (酥油或芝麻油)(for tempering)
  • 0.5 tsp Mustard Seeds (芥末籽)(For cooking dal.)
  • to taste Fenugreek Seeds (葫芦巴籽)(optional)
  • 2 tbsp Dry Red Chilies (干红辣椒)(halved and seeds removed)
  • a pinch Curry Leaves (咖喱叶)(Optional, but adds a distinct flavor.)
  • 0.5 tsp Asafoetida (Hing) (阿魏胶)(Optional, for extra heat.)
