  • 3 tbsp Vegetable oil
  • 2 large Onions(chopped)
  • 2 large Bell peppers (any color)(chopped)
  • 6 cloves Garlic(minced)
  • 4 medium Tomatoes(chopped)
  • 1 bunch Cilantro(chopped)
  • 2 tbsp Achiote paste(or to taste)
  • 4 cups Chicken broth or water
  • 1 tsp Allspice berries
  • 1 tsp Cumin
  • 1 tsp Black pepper
  • to taste Salt
  • 1 Optional: Scotch bonnet pepper(whole, for heat)
