  • 4 large Green plantains(peeled and sliced into 1-inch pieces)
  • 0.5 lb Beef or goat meat(cut into bite-sized pieces (optional))
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic(minced)
  • 2 medium Tomatoes(chopped)
  • 1 medium Bell pepper(chopped)
  • 2 tablespoons Vegetable oil
  • 2 cups Beef or vegetable broth
  • 0.5 cup Ground peanuts(or peanut butter)
  • Salt(to taste)
  • Black pepper(to taste)
  • 1 small Chili pepper(sliced (optional))

    Prepare the plantains: Peel the green plantains by cutting off the ends and slitting the skin lengthwise. Carefully peel the skin back. Slice the plantains into 1-inch thick pieces.

    If using meat, heat vegetable oil in a large pot over medium heat. Add the meat and brown on all sides. Remove meat and set aside.

    Stir in the chopped tomatoes and bell pepper. Cook for a few minutes until they begin to soften.
