Agatogo is a hearty and flavorful Rwandan stew made primarily with green plantains, often combined with vegetables like tomatoes, onions, and bell peppers. - 4 large Green plantains(peeled and sliced into 1-inch pieces)
- 0.5 lb Beef or goat meat(cut into bite-sized pieces (optional))
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 2 medium Tomatoes(chopped)
- 1 medium Bell pepper(chopped)
- 2 tablespoons Vegetable oil
- 2 cups Beef or vegetable broth
- 0.5 cup Ground peanuts(or peanut butter)
- Salt(to taste)
- Black pepper(to taste)
- 1 small Chili pepper(sliced (optional))

Prepare the plantains: Peel the green plantains by cutting off the ends and slitting the skin lengthwise. Carefully peel the skin back. Slice the plantains into 1-inch thick pieces.

If using meat, heat vegetable oil in a large pot over medium heat. Add the meat and brown on all sides. Remove meat and set aside.

In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Stir in the chopped tomatoes and bell pepper. Cook for a few minutes until they begin to soften.

Return the browned meat to the pot (if using). Add the sliced plantains, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer until the plantains are tender, about 30 minutes.

Stir in the ground peanuts (or peanut butter) and the optional chili pepper. Simmer for another 5-10 minutes, or until the stew has thickened to your desired consistency.
