Antiguan Curried Fish

- 1.5 lbs White fish fillets(such as snapper, grouper, or mahi-mahi, cut into 2-inch pieces)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 tablespoon Ginger(freshly grated)
- 1 small Scotch bonnet pepper(finely chopped, seeds removed for less heat)
- 3 tablespoons Curry powder(Antiguan or Caribbean style)
- 1 teaspoon Turmeric powder
- 1 teaspoon Thyme(dried or fresh leaves)
- 0.5 teaspoon Allspice(ground)
- 1 can (13.5 oz) Coconut milk(full-fat)
- 2 tablespoons Vegetable oil

- 2 tablespoons Fresh cilantro(chopped, for garnish)
