  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1 tablespoon Ginger(freshly grated)
  • 1 small Scotch bonnet pepper(finely chopped, seeds removed for less heat)
  • 3 tablespoons Curry powder(Antiguan or Caribbean style)
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Thyme(dried or fresh leaves)
  • 0.5 teaspoon Allspice(ground)
  • 1 can (13.5 oz) Coconut milk(full-fat)
  • 2 tablespoons Vegetable oil

  • 2 tablespoons Fresh cilantro(chopped, for garnish)
