Armenian Lentil and Eggplant Stew
A hearty and flavorful vegetarian stew combining tender lentils and soft eggplant with aromatic spices and tomatoes. This dish is perfect for a comforting meal, especially during cooler months.

- 1 medium Onion(diced)
- 1 pound Eggplant(peeled and diced into 1/2-inch cubes)
- 1 medium Bell pepper(any color, diced)
- 3 cloves Garlic(minced)
- 28 oz Diced tomatoes(undrained)
- 1 cup Brown or red lentils(rinsed)
- 4 cups Vegetable broth
- 2 tsp Paprika
- 0.75 tsp Cinnamon
- 0.5 tsp Cumin
- 0.25 tsp Allspice
- 2 tsp Dried mint
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 0.5 cup Golden raisins or dried apricots(optional)

Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and sautรฉ until translucent, about 8-10 minutes.

Add diced eggplant and bell pepper to the pot. Cook for about 5 minutes, stirring occasionally, until they begin to soften.

Stir in the minced garlic, diced tomatoes (with their juice), rinsed lentils, vegetable broth, paprika, cinnamon, cumin, allspice, and dried mint. Add salt and pepper to taste.

Bring the stew to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender and the eggplant is very soft. Stir occasionally, adding more broth or water if the stew becomes too thick.

If using, stir in the golden raisins or dried apricots during the last 10 minutes of cooking.
