Armenian Lentil and Rice Pilaf

- 1.5 cups Long-grain rice(rinsed)
- 2 large Onions(thinly sliced)
- 4 cups Vegetable broth
- 4 tbsp Olive oil
- 3 cloves Garlic(minced)
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 0.25 cup Fresh dill(chopped, for garnish)
- 2 tbsp Fresh mint(chopped, for garnish (optional))

In a medium saucepan, combine the rinsed lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until tender but not mushy. Drain any excess water and set aside.
