🧂 Ingredients

  • 2 each Rock lobster tails(about 1 lb/450 g each)
  • 1 Tbsp Seafood seasoning
  • 0.25 cup Olive oil
  • 0.25 diced Onion
  • 2 diced Garlic cloves
  • 0.5 diced Green bell pepper
  • 0.5 diced Red bell pepper
  • 2 tsp Tomato paste
  • 0.5 diced Ripe tomato
  • 0.25 cup Water or fish stock
  • 1 Tbsp Worcestershire sauce
  • 3 sprigs Fresh thyme leaves
  • 0.25 tsp Ground black pepper
  • 1 Juice of Lemon juice
  • 1 Tbsp Caribbean pepper sauce (hot sauce)
  • 2 tsp Diced fresh Italian Parsley

    Using clean shears, remove lobster meat from the shells. Dice meat with a sharp knife and season with seafood seasoning. Set aside.

    In a large skillet, heat olive oil over medium heat. Add onion, garlic, green and red peppers and cook for 3 minutes.

    Stir in tomato paste and cook for 2 minutes. Add diced tomato and cook for another 2 minutes.

    Stir in water (or stock), Worcestershire sauce, thyme leaves, black pepper, and Caribbean pepper sauce. Bring to a boil.

    Add the seasoned lobster meat to the skillet and cook for 10 minutes, or until opaque and done.

    Stir in lemon juice and fresh parsley. Adjust seasoning with salt and pepper if needed.
