🧂 Ingredients

  • 400 g Conch meat(cleaned and finely chopped)
  • 1.5 cups All-purpose flour
  • 1 tsp Baking powder
  • 0.5 medium Onion(finely chopped)
  • 0.5 small Scotch bonnet pepper(finely minced, seeds removed for less heat)
  • 2 tbsp Fresh parsley(chopped)
  • 1 tbsp Fresh thyme(chopped)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.75 cup Water(approximately, or as needed for batter consistency)
  • for frying Vegetable oil

👨‍🍳 Instructions

  1. 1

In a large bowl, combine the chopped conch meat, flour, baking powder, chopped onion, minced Scotch bonnet pepper, parsley, thyme, salt, and black pepper.

  2. 2

Gradually add water, mixing until a thick batter forms. The consistency should be similar to pancake batter, but slightly thicker.

  3. 3

Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven over medium-high heat to 350°F (175°C).

  4. 4

Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry in batches.

  5. 5

Fry for 3-5 minutes per side, or until golden brown and cooked through. The fritters should float to the surface when done.

  6. 6

Remove fritters with a slotted spoon and drain on paper towels. Serve hot.

  • Maintain a consistent oil temperature for even cooking and crispiness.

🔄 Variations

  • Add a tablespoon of finely chopped bell pepper for extra flavor and color.
  • Serve with a side of Bajan pepper sauce or a spicy aioli for dipping.
