A hearty and flavorful dish featuring buckwheat groats cooked with sautéed mushrooms and onions, seasoned with traditional Belarusian herbs and spices. This dish highlights the importance of buckwheat in Belarusian cuisine, offering a nutritious and earthy flavor profile.

🧂 Ingredients
- 1 cup Buckwheat groats
- 2 cups Water or vegetable broth
- 200 g Mushrooms (e.g., cremini, porcini)(sliced)
- 1 medium Onion(finely chopped)
- 2 tbsp Butter or vegetable oil
- 2 cloves Garlic(minced)
- 2 tbsp Fresh dill(chopped)
- 1 Bay leaf
- 1/2 tsp Black pepper(freshly ground)
- to taste Salt
👨🍳 Instructions
- 1
Rinse the buckwheat groats thoroughly under cold water and drain well.
- 2
In a medium saucepan, bring the water or vegetable broth to a boil with the bay leaf.
- 3
Add the rinsed buckwheat to the boiling liquid, reduce heat to low, cover, and simmer for 15-20 minutes, or until the liquid is absorbed and the buckwheat is tender.
- 4
While the buckwheat is cooking, heat the butter or oil in a separate skillet over medium heat. Add the chopped onion and sauté until softened and golden, about 8 minutes.
- 5
Add the sliced mushrooms and minced garlic to the skillet with the onions. Cook, stirring occasionally, until the mushrooms have released their moisture and are browned, about 5-7 minutes.
- 6
Once the buckwheat is cooked, remove it from the heat. Let it sit, covered, for 5-10 minutes to steam.
- 7
Fluff the cooked buckwheat with a fork. Stir in the sautéed mushroom and onion mixture, chopped fresh dill, black pepper, and salt to taste.
- 8
Serve hot as a side dish or a main course.
💡 Pro Tips
- ✓For a nuttier flavor, toast the dry buckwheat groats in the skillet for a few minutes before adding the liquid.
- ✓You can add other vegetables like carrots or bell peppers along with the onions.
- ✓For a richer dish, use mushroom broth instead of water.
