Bobor de Feijão Verde (Green Bean Porridge)
Bobor de Feijão Verde is a comforting and nutritious porridge made with green beans, rice, and coconut milk. It's a staple in many Timorese households, often served as a light meal or a side dish.

🧂 Ingredients
- 300 g Green beans(trimmed and chopped)
- 100 g Rice(rinsed)
- 400 ml Coconut milk
- 600 ml Water
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 0.5 inch piece Ginger(grated)
- 1 tsp Salt(or to taste)
- 1 tbsp Vegetable oil
👨🍳 Instructions
- 1
Heat vegetable oil in a pot over medium heat. Sauté the chopped onion, minced garlic, and grated ginger until fragrant and softened, about 3-5 minutes.
- 2
Add the rinsed rice and chopped green beans to the pot. Stir well to coat them with the aromatics.
- 3
Pour in the water and coconut milk. Bring the mixture to a boil, then reduce the heat to low.
- 4
Cover the pot and simmer for about 30-35 minutes, stirring occasionally, until the rice is cooked and the porridge has thickened to your desired consistency. Add more water if it becomes too thick.
- 5
Season with salt to taste. Stir well before serving.
- 6
Serve hot as a comforting meal or side dish.
💡 Pro Tips
- ✓Ensure the rice is well rinsed to remove excess starch, which can make the porridge gummy.
- ✓Stir frequently to prevent the rice from sticking to the bottom of the pot.
- ✓For a creamier texture, use full-fat coconut milk.
🔄 Variations
- Add other vegetables like carrots or sweet potatoes.
- Incorporate a small piece of dried fish or shrimp for added umami.
