- 2-3 Green chilies(slit lengthwise)
- 10-12 Curry leaves
- 1 tsp Turmeric powder
- 1/2 tsp Chili powder(adjust to taste)

Prepare the banana flower: Clean the outer leaves and the stamen. Slice the tender inner part very thinly. Soak the sliced banana flower in water with a little salt or lemon juice for about 15-20 minutes to prevent browning and remove bitterness. Drain well.

In a pot, heat oil over medium heat. Add sliced onions and sauté until translucent.

Add minced garlic, grated ginger, curry leaves, and green chilies. Sauté for another minute until fragrant.

Stir in turmeric powder, chili powder, and coriander powder. Cook for 30 seconds, stirring constantly.

Add the drained banana flower slices to the pot. Mix well with the spices and cook for about 5-7 minutes until the banana flower softens slightly.
