🧂 Ingredients
- 300 g Dried fish (bacalhau or similar)(soaked overnight and deboned)
- 4 large Ripe bananas(peeled and sliced)
- 150 ml Palm oil
- 2 medium Onions(chopped)
- 4 cloves Garlic(minced)
- 3 medium Tomatoes(diced)
- 200 g Spinach(washed and chopped)
- 150 g Okra(sliced)
- 2 Chili peppers(to taste, finely chopped)
- 500 ml Water
- to taste Salt
- to taste Black pepper
👨🍳 Instructions
- 1
Prepare the dried fish by soaking it in water overnight to rehydrate and remove excess salt. Drain, rinse, debone, and cut into manageable pieces.
- 2
Heat the palm oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.
- 3
Add the minced garlic and chopped chili peppers to the pot and cook for another minute until fragrant.
- 4
Add the prepared dried fish pieces to the pot and sear them lightly for a few minutes.
- 5
Stir in the diced tomatoes and cook for about 5 minutes until they begin to break down.
- 6
Add the sliced bananas, chopped spinach, and sliced okra to the pot. Pour in the water, and season with salt and black pepper to taste.
- 7
Bring the stew to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for at least 1 hour, or until the bananas have softened and the flavors have melded. Stir occasionally to prevent sticking.
- 8
Taste and adjust seasoning if necessary. The stew should have a thick, rich consistency. Serve hot, traditionally with funge (cassava porridge) or rice.
💡 Pro Tips
- ✓Ensure the bananas are ripe but not overly mushy for the best texture.
- ✓If dried fish is unavailable, you can substitute with salted cod or even a firm white fish, adjusting the salt accordingly.
- ✓For a vegetarian version, omit the fish and consider adding more vegetables or firm tofu.
🔄 Variations
- Some variations include adding other vegetables like eggplant or pumpkin.
- A touch of smoked paprika can add an extra layer of flavor.
