  • 600 g White fish fillets(such as cod, tilapia, or snapper, cut into chunks)
  • 1 large Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 tablespoon Ginger(freshly grated)
  • 1 medium Red bell pepper(chopped)
  • 1 medium Green bell pepper(chopped)
  • 2 medium Carrots(peeled and sliced)
  • 2 tablespoons Curry powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cinnamon
  • 400 ml Coconut milk(full-fat)
  • 200 g Diced tomatoes(canned)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt(or to taste)
  • 0.25 cup Fresh cilantro(chopped, for garnish)
  • Lime wedges(for serving)

    Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger, and cook for 1 minute until fragrant. Stir in the curry powder, turmeric, cumin, and cinnamon, and cook for another minute until fragrant.

    Add the chopped bell peppers and sliced carrots to the pot. Stir well to coat with the spices.

    Pour in the coconut milk and diced tomatoes. Stir to combine, scraping up any bits from the bottom of the pot. Bring to a simmer.
