- 1 bunch Coriander(chopped, for garnish)
👨🍳 Instructions
- 1
Heat palm oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.
- 2
Add chopped onions to the pot and sauté until softened, about 5-7 minutes.
- 3
Add minced garlic and cook for another minute until fragrant.
- 4
Stir in the diced tomatoes, bay leaves, salt, and pepper. Cook for 5 minutes, allowing the tomatoes to break down.
- 5
Return the browned beef to the pot. Pour in the beef broth and bring to a simmer.
- 6
Reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.
- 7
In a separate bowl, whisk the peanut butter with a little warm water or some of the stew liquid until smooth. Add this mixture to the pot.
- 8
Add the prepared okra to the stew. Stir well to combine.
- 9
Continue to simmer, uncovered, for another 20-30 minutes, or until the okra is tender and the sauce has thickened.
- 10
Adjust seasoning if necessary. Garnish with fresh coriander before serving.
💡 Tip: Serve hot with funge, rice, or ugali.
💡 Pro Tips
- ✓To reduce the sliminess of okra, you can lightly sauté it before adding it to the stew, or add a splash of vinegar.
- ✓For a richer peanut flavor, toast the peanuts before grinding them into peanut butter.
- ✓If the sauce is too thick, add a little more beef broth or water.
🔄 Variations
