- 600 g Firm white fish fillets(such as cod, snapper, or tilapia, cut into 2-inch pieces)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(canned crushed or diced)
- 400 ml Coconut milk(full-fat)
- 2 tbsp Vegetable oil
- 1 tsp Cumin seeds
- 1 tsp Coriander seeds
- 0.5 tsp Turmeric powder
- 1 tsp Garam masala
- 0.5 tsp Chili powder(or to taste)
- 1 tsp Salt(or to taste)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add cumin seeds and coriander seeds and toast for about 30 seconds until fragrant.
