  • 1 cup Dried pigeon peas(soaked overnight or quick-soaked)
  • 1 can (13.5 oz) Coconut milk
  • 1.5 cups Water or vegetable broth
  • 1/2 medium Onion(chopped)
  • 2 cloves Garlic(minced)
  • 1 sprig Thyme(fresh)
  • 1/4 piece Scotch bonnet pepper(whole, or to taste, optional)

  • 1 tbsp Vegetable oil

    Rinse the soaked pigeon peas thoroughly and drain.

    In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.
