Dominican Souse

- 1 tbsp Thyme(chopped)

- 1 Cucumber(sliced or diced)
- 1 tbsp Salt(to taste)

Wash the pig's feet thoroughly, scrubbing with lime juice and rinsing under cold water. If using cow's heel or skin, prepare accordingly.

Place the cleaned pig's feet in a large pot. Add garlic cloves, a few sprigs of thyme, and a little salt. Cover with about 6 cups of water.

Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours, or until the meat is very tender and falling off the bone. You can also use a pressure cooker for about 45-60 minutes.
