Domoda Guineense
A rich and comforting West African peanut stew, often made with meat (beef or chicken) and vegetables, served over rice.

🧂 Ingredients
- 1 kg Beef or chicken(cut into bite-sized pieces)
- 2 large Onions(chopped)
- 4 cloves Garlic cloves(minced)
- 400 g Tomatoes(chopped or crushed)
- 3 tbsp Tomato paste
- 200 g Peanut butter(smooth, unsweetened)
- 800 ml Vegetable stock
- 800 g Sweet potatoes(peeled and cubed)
- 2 medium Carrots(peeled and sliced)
- 1 medium Chili pepper(finely minced (adjust to taste))
- 1 tsp Coriander(ground)
- 1.5 tsp Cumin(ground)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 1 tbsp Lemon juice
- 2 tbsp Vegetable oil

Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until softened, about 5-7 minutes.

Add minced garlic and chili pepper, sauté for another minute until fragrant.

Stir in the tomato paste and cook for 1-2 minutes.

Add the chopped tomatoes and cook until they begin to break down.

Stir in the peanut butter, ensuring it's well combined with the tomato mixture. Gradually add the vegetable stock, stirring constantly to create a smooth sauce.

Add the meat (beef or chicken), sweet potatoes, carrots, ground coriander, ground cumin, salt, and black pepper. Bring to a boil, then reduce heat, cover, and simmer for at least 1 hour, or until the meat and vegetables are tender.

Stir in the lemon juice. Adjust seasoning if necessary.
