  • 2 large Onions(chopped)
  • 4 cloves Garlic cloves(minced)
  • 400 g Tomatoes(chopped or crushed)
  • 3 tbsp Tomato paste
  • 200 g Peanut butter(smooth, unsweetened)
  • 800 ml Vegetable stock
  • 800 g Sweet potatoes(peeled and cubed)
  • 2 medium Carrots(peeled and sliced)
  • 1 medium Chili pepper(finely minced (adjust to taste))
  • 1 tsp Coriander(ground)
  • 1.5 tsp Cumin(ground)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(or to taste)
  • 1 tbsp Lemon juice
  • 2 tbsp Vegetable oil

👨‍🍳 Instructions

  1. 1

Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until softened, about 5-7 minutes.

  2. 2

Add minced garlic and chili pepper, sauté for another minute until fragrant.

  3. 3

Stir in the tomato paste and cook for 1-2 minutes.

  4. 4

Add the chopped tomatoes and cook until they begin to break down.

  5. 5

Stir in the peanut butter, ensuring it's well combined with the tomato mixture. Gradually add the vegetable stock, stirring constantly to create a smooth sauce.

  6. 6

Add the meat (beef or chicken), sweet potatoes, carrots, ground coriander, ground cumin, salt, and black pepper. Bring to a boil, then reduce heat, cover, and simmer for at least 1 hour, or until the meat and vegetables are tender.

  7. 7

Stir in the lemon juice. Adjust seasoning if necessary.

  8. 8

Serve hot over plain boiled rice.

💡 Pro Tips

  • For a smoother sauce, you can blend a portion of the stew with an immersion blender.
  • Adjust the amount of chili pepper to your preferred level of spice.
  • Ensure you use natural peanut butter with no added sugar for the best flavor.

🔄 Variations

  • Add other vegetables like green beans or bell peppers.
  • Can be made with fish instead of meat.
