- 600 g Firm white fish fillets(such as sea bass or cod, cut into chunks)
- 400 g Cooked beans(such as black beans or kidney beans, drained and rinsed)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 medium Bell pepper(any color, chopped)
- 2 medium Tomatoes(diced)
- 400 g Canned chopped tomatoes
- 500 ml Fish broth or water
- 1 Bay leaf
- 1 tsp Thyme(dried)
- 0.5 tsp Cumin(ground)
- 0.5 tsp Coriander(ground)
- 2 tbsp Palm oil or vegetable oil
- Salt(to taste)
- Black pepper(to taste)
- 0.25 cup Fresh parsley(chopped, for garnish)

Heat palm oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.

Add minced garlic, chopped bell pepper, and diced tomatoes. Cook for 5 minutes, stirring occasionally.

Stir in the ground cumin and coriander, cook for 1 minute until fragrant.

Add the canned chopped tomatoes, fish broth (or water), bay leaf, and dried thyme. Bring to a simmer.
