Foul Medames (Omani Style)
A hearty and flavorful fava bean stew, Omani-style Foul Medames incorporates local spices and a touch of richness, often served for breakfast or as a light meal. It's a comforting dish that highlights the versatility of fava beans.

- 2 cans (400g each) Canned Fava Beans(drained and rinsed)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 2 medium Tomatoes(diced)
- 1 tsp Cumin Powder
- 0.5 tsp Coriander Powder
- 0.25 tsp Turmeric Powder
- 0.25 tsp Chili Flakes(optional)
- 0.5 cup Vegetable Broth or Water
- 3 tbsp Olive Oil
- 2 tbsp Lemon Juice
- to taste Salt
- to taste Black Pepper
- 2 tbsp Fresh Parsley(chopped, for garnish)
- 2 tbsp Fresh Cilantro(chopped, for garnish)

Heat 2 tbsp of olive oil in a saucepan over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the diced tomatoes, cumin, coriander, turmeric, and chili flakes (if using). Cook for about 5 minutes, until the tomatoes begin to break down.

Add the drained and rinsed fava beans, vegetable broth or water, salt, and pepper. Bring to a simmer.

Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld. You can mash some of the beans against the side of the pot to thicken the stew.

Stir in the lemon juice and the remaining 1 tbsp of olive oil.
