  • 1 cup Lentils(rinsed and soaked overnight)
  • 2 tbsp Olive oil
  • 1 medium Onion(finely chopped)
  • 2 cloves Garlic(minced)
  • 1 medium Carrot(finely chopped)
  • 1 cup Pumpkin (zapallo)(peeled and diced)
  • 4-6 cups Water or vegetable broth
  • 1 tsp Ají de color (paprika)
  • 1/2 tsp Cumin
  • to taste Salt
  • to taste Black pepper
  • 1/2 cup Rice(optional)
  • 2 links Longaniza (Chilean sausage)(sliced, optional)

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

    Add the minced garlic and chopped carrot. Cook for another 2 minutes until fragrant.

    Stir in the diced pumpkin, ají de color, and cumin. Cook for 1 minute.

    Add the rinsed and soaked lentils, water or broth, salt, and pepper. If using rice, add it now. Bring to a boil, then reduce heat, cover, and simmer for 45-60 minutes, or until lentils and pumpkin are tender.

    If using longaniza, add the sliced sausage during the last 15 minutes of cooking.

    Adjust seasoning to taste. Serve hot, garnished with fresh cilantro if desired.
